INDUSTRIAL PERFORMANCE: Amount of oil that is extracted per kilo of olive during the industrial process (Almazara). You only really know once the process is finished., so at the end of the campaign as in previous years, this parameter will be corrected.
TOTAL FAT(on wet): Indicates the 100% of the fat content of the olive.
HUMIDITY: It is the water content present in the fruit. This parameter is necessary in case of counteranalysis.
Once the campaign is over and Industrial performances are updated, The difference between TOTAL FAT and RECOGNIZED INDUSTRIAL PERFORMANCE can be individually verified., This difference being the oil extraction capacity by the Almazara.
